When cooking steak it is important to allow the beef to rest for about 2 hours in a cool place then season with salt and pepper . When cooking make sure your pan is warm , seal the steak on both sides this allows the juices to be retained , turn down you heat to cook should you notice juices escaping from your steak turn up heat on pan, to know how and when you steak is cooked ,pierce it with a thin shark probe (squire or such like) you can tell by the juices coming out of the pierce how yours steak is cooked e.g. the redder the rarer your steak is.
